The Wine

TYPE: Sparkling white wine
ORIGIN: Trentino
GRAPES: Chardonnay
SENSATIONS: Bright gold colour with a fine and persistent perlage. The nose expresses an intense bouquet of citrus and white flowers with hints of bread crust and yeast. Creamy on the palate with a complex structure and persistent finish.
VINIFICATION: After gentle destemming of the grapes, fermentation follows at a controlled temperature (20-22°C) in stainless steel tanks. The second fermentation takes place following the rules of the classic method, adding the selected yeasts directly in the bottle. After about 30 months on the lees, the sparkling wine is degorged, refilled and aged before release.
